If you love avocado then you will love these guacamole deviled eggs. Avocado, cilantro and cumin give these a delicious guacamole flavor. You can even mix in some additional ingredients to change things up a bit. These deviled eggs make a great party appetizer for any occasion, a keto snack or a keto egg fast meal.

What is the keto egg fast?

The keto egg fast diet is a short term method in which your food focus is on eggs to help reduce your daily carb intake so you can quickly get into ketosis. There are a variety of reasons for doing this: Maybe you have been on the keto diet for a while and have hit a plateau. If you’ve been slowly having more carbs creep back into your meals then the egg fast can easily reduce them and help get you back on track Some people use it to help them quickly get into ketosis at the start of their keto journey If you’ve found yourself getting off track due to holiday eating, and all the high carbs meal favorites that people like to indulge in, then the egg fast can help you kick the carb cravings that can hit when you first jump back into keto If you’ve hit a plateau, are trying to get into ketosis or trying to kick carb cravings after getting off track then the keto egg fast diet might be the thing for you. How To Perfectly Boil An Egg

Let’s start with the part of making deviled eggs that most people ask about…. how to boil and peel them without having the shell stick and tear off pieces of the egg. I hate when that happens. Now there are a variety of methods that you can follow. You can use the method where you bring the water to a boil first then add the eggs and remove after they have boiled for a certain amount of time. Personally I like this easier method for making hard boiled eggs. Place the eggs in a saucepan that is just large enough to hold them in single layer. Add in enough cold water to cover the eggs by 1 inch. Heat over high heat until just to boiling. Once the water is boiling then remove the pan from the burner. Cover the pan and let the eggs sit in the hot water for about 15 minutes for extra large eggs, 12 minutes for large eggs and 9 minutes for medium eggs. When the time is up drain the water out, cool them with cold running water or place them in an ice bath. Once cool remove the shells and refrigerate until needed. If you’ve struggled with making hard boiled eggs that are perfectly done, with no green ring around the yolks and with shells that come off easily I suggest trying this method. INGREDIENTS:

6 hard boiled eggs

1 medium avocado

2 tablespoons mayo

1/2 teaspoon cumin

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon crushed red pepper flakes

2 tablespoons cilantro, chopped

DIRECTIONS:

Hard boil the eggs, cool and remove shells. Cut in half. Remove the egg yolks.

WHAT CAN I USE IN PLACE OF MAYO?

Not a fan of mayonnaise? It’s usually called for in many deviled egg recipes but can be swapped out. Try using Greek yogurt or even sour cream in place of mayo. The mustard in the recipe can also be swapped out. The mustard gives the yolk filling a bit of tang and, based on your egg mix-ins, this can be swapped out for other things. Try some Dijon mustard, hot sauce, lemon juice and even a bit of vinegar.

HOW DO YOU FILL THE EGGS?

You can either use a spoon to scoop the filling into the egg whites. Or my favorite way….use a sandwich bag to make a piping bag. These pictures will give you an idea of how to easily use a sandwich or freezer bag to make a piping bag. Take a sandwich bag and fold the edges down. Stick the bag into a mug or cup. This helps to hold the filling so you can get it all the way into one of the corners. Place the filling in the bag. Fold the bag back up and give it a twist right above the filling. You are trying to get the filling down into one corner of the bag.

Once you have the piping bag ready then simply use scissors to cut the corner off. Don’t make a big cut or else this will allow a lot of filling to come out. Snip the corner and squeeze the filling into the eggs. Keep twisting the bag to get all the filling to stay down in the corner as you are using it.

SERVING AND STORING DEVILED EGGS

Hard boiled, peeled eggs and the filling mix can be made 1 day in advance and stored in the refrigerator. Store the filling mix in a piping bag (important if using avocados in the mixture to keep it from going brown) or an airtight container. Spoon or pipe the filling into the egg halves when you are ready to serve them.

CAN DEVILED EGGS BE FROZEN?

No. Freezing hard boiled eggs will cause them to become rubbery and will make the filling mix watery. Make and use them within 7 days and store them in the refrigerator.

HOW LONG CAN YOU KEEP DEVILED EGGS AT ROOM TEMPERATURE?

Once you add the filling, deviled eggs can be prepared up to two hours in advance if sitting at room temperature. After that they should be refrigerated. If making and serving a large number of eggs at a party or gathering it is best to put some out to serve and keep some stored in the refrigerator until needed.
