EVER wondered why shrimp in a good Chinese restaurant is so glossy and firm? When they are properly prepared, their texture can almost be described as silky. This can be achieved not merely by avoiding the most common pitfall with shrimp - overcooking -but by following a couple of other steps along the way. If you soak peeled shrimp in very cold heavily salted water, the sticky film that coats them is leeched out. They also taste fresher and cleaner. After being soaked for a few minutes, the shrimp are then rinsed thoroughly under cold running water and are ready for cooking. But to achieve the smooth glossiness of the shrimp as it appears in many Chinese dishes, they should be marinated for at least 15 minutes in a mixture of cornstarch and lightly beaten egg white, after they have been rinsed. Then they should be partly cooked in peanut oil. The oil should not be so hot as to brown the shrimp and cook them through - this will defeat the whole purpose of the exercise. When the oil is just hot enough to keep one shrimp afloat, add the rest and stir them so that they don't stick to each other. They should remain in the oil for only seconds, just long enough to turn opaque on the surface. Then remove them with a slotted spoon and drain them on paper towels. The oil may be used again but only for seafood dishes and should not be reused more than twice. The shrimp can be prepared well in advance of the final cooking.
