With their bold color and taste, tomatoes make a fine foundation for a stew. They contain naturally high levels of glutamic acid, an amino acid that has the fortuitous effect of making other foods taste better and more savory. Unfortunately, there are plenty of other acids in tomatoes, and tomato-based sauces and stews can cause indigestion and discomfort to diners with sensitive stomachs. It's possible to reduce the acidity in the stew, or you can mask its taste for less-sensitive diners. If dinnertime is looming and your stew is too acidic for comfortable eating, there's only one really practical way for home cooks to reduce its acidity. That's through the use of baking soda. It's an alkaline chemical properly known as sodium bicarbonate, which reacts with acidity to produce carbon dioxide gas. Stir 1/2 teaspoon of soda into your stew and wait while it foams up and then subsides. Stir your stew thoroughly and taste it to see how acidic it still is. Repeat these steps until you've tamed the stew to a more stomach-friendly level, then adjust its seasoning until the flavors are nicely balanced. If your concern is less for your stomach and more for your palate, it might not be necessary to reduce the physical acidity of the sauce. Masking it instead is a perfectly reasonable strategy, bringing the stew's acidity into check by tweaking its other flavors. The most direct means of doing this is with sweetness. A small quantity of raw sugar, agave syrup or natural honey can take the edge from your stew, bringing out the full flavor of the tomatoes. Alternatively, stir in sweet ingredients such as mellow-flavored apples, shredded carrots or caramelized onions and let them dissolve into the stew as it cooks. Although sweetness counters acidity very effectively, it's not your only option. A small quantity of salt can also reduce the acidity's impact. You can add it in the form of pure table salt or sea salt or through salty ingredients such as anchovies or pancetta. The latter two add richly savory flavors to the sauce, helping to conceal the acidity, as do mushrooms, celery and many other ingredients. Hot spices can complement the acidity and help mask its effect, so bold use of either black pepper or chilies can also help mask the acidity. Don't use this option if your stomach is sensitive because while it conceals the acidity on your palate, it can increase your distress after the meal.
