Slimline Beef Fajitas

1 pound beef skirt steak or flank steak

1/4 cup lime juice

2 tablespoons apple cider vinegar

3 tablespoons brown sugar

2 cloves garlic, minced

1/4 teaspoon salt

1 cup shredded lettuce

1 tablespoon Worcestershire sauce

1 Spanish onion, sliced into strips

1 red bell pepper, sliced into strips

1 cup Skinny Guacamole (recipe follows)

4 large flour tortillas

1/2 cup bottled salsa

Trim meat of visible fat. Place in a glass dish. Combine lime juice, vinegar, brown sugar, garlic, salt and Worcestershire sauce; pour over beef. Allow to marinate overnight. Preheat a gas or charcoal-fired grill. When coals are medium-hot, grill meat for 6 minutes per side, basting periodically with marinade. Reserve any extra marinade. Allow meat to rest 10 minutes before slicing into thin strips against the grain. Pour remaining marinade in a heavy skillet. Bring to a boil and simmer the onions until limp and transparent. Add red pepper strips and cook 5 minutes, until marinade begins to boil away and becomes sticky. Remove from heat; keep warm. Wrap tortillas in foil and heat through. When ready to serve, arrange meat, onions and peppers, salsa, Skinny Guacamole and lettuce in separate bowls. Each person can take a tortilla and wrap their own fajita with desired fillings.

Skinny Guacamole

1 ripe avocado, peeled and seeded

1 green onion, chopped

1 small ripe tomato, seeded and chopped

1/4 teaspoon salt

1/4 teaspoon black pepper

1 1/2 tablespoons lime juice

2 tablespoons fresh cilantro, finely chopped

2 drops hot pepper sauce

Chop avocado. Combine avocado, green onion, tomato, salt, pepper, lime juice, cilantro and hot pepper sauce. Stir and mash slightly to blend. Serve at room temperature.

Makes 1 cup.
