A low carb keto ramen soup recipe that tastes almost identical to Top Ramen, but has far fewer carbs! This ramen recipe is definitely one of the best - if not the best - soup recipes you can make for the keto diet. Mostly because each cup only has 1.5g of net carbs. Which is just unheard of for ramen.

The Best Keto Ramen

This keto ramen recipe is almost as easy as making Top Ramen from a package. ALMOST being the key word there! Lol. Anyways, this low carb ramen is seriously easy to make. It takes about 15ish minutes. And, ya know, for making ramen from scratch, I think that's pretty impressive.

Especially when you consider that every serving has just 1.5g NET CARBS!

Yeah, you read that right.

Each serving of this keto ramen has LESS THAN 2g NET CARBS. So, you could eat this stuff every day. Actually, you could eat it 2 or 3 times a day if you wanted to.

And, honestly, I wouldn't judge you if you did.

Because, well, when it's cold outside, what's better than a warm bowl of soup?!

Or, uh, ramen?!

Especially when it's low carb and keto friendly.

Ingredients

So, this keto ramen recipe has 2 main components - the noodles and the broth.

With that said, let's dissect them in a bit more detail.

Keto Ramen Broth Spice Mix

So, let's talk about the spices you'll need for this ramen...

Onion powder

Garlic powder

Garlic salt

Nutritional yeast flakes

Ground ginger

& Crushed black pepper

So a pretty standard list of spices. That is, of course, besides the nutritional yeast flakes. I'm guessing many of you have never heard of these before. Basically, they're kind of a superfood. Nutritional yeast flakes are packed with tons of micronutrients, and they're loaded with fiber and protein. And they have a wonderfully cheesy-ish taste to them that provides the perfect depth of flavor to this keto ramen noodle soup recipe. Now, your keto ramen noodles will still be good without them, but it won't be GREAT. But still better than instant ramen noodles.

Keto Ramen Noodles To Use

As I said before, the other important ingredient in making keto ramen is the keto ramen noodles. Obviously, normal ramen noodles won't work. They're basically just straight up carbs. So, instead, you'll want to use shirataki noodles like these. And, these actually work fantastic for ramen specifically. In my opinion, they have the same consistency and texture of the noodles you get in the package. Except they don't come in a dry, hard, brick of noodles like packaged ramen noodles do. That said, they are NOT great for spaghetti. So, don't use them for anything except ramen. They shine bright in a bowl of keto ramen noodles, but that's about it.

How To Make Low Carb Ramen

There are 2 key ingredients to this keto ramen recipe. The keto ramen noodles and the right ramen spice mix. The base is just chicken broth, so there's nothing too special about that. What makes the broth special is the aforementioned spice mix. So I did some extensive testing to get just the right mix of spices for the broth. Because, of course, I wanted it to taste like Top Ramen from the package. And I think I succeeded in doing that. So, uh, I hope you think so too!

Now let's make some low carb ramen noodles!

Step 1: Prepping The Noodles

First, wash the noodles in a strainer under warm water.

Then sprinkle about 1 tablespoon of salt on top and continue washing. Set the noodles aside for later, and let's get started on the soup portion.

Step 2: Making The Soup

Now add the chicken broth to a pot and put it over medium heat. Next, add the noodles to the pot and bring it to a boil. And while you're waiting for it to boil, put all of the spice ingredients in a small dish and mix them to combine. Then once the broth is boiling, add the spice mixture to the pot and let it continue to boil for about 3 minutes, stirring occasionally.
