Escherichia coli O157, sometimes called VTEC, is a bacterial infection. It can cause severe stomach pain, bloody diarrhoea and kidney failure. E. coli O157 is found in the gut and faeces of many animals, particularly cattle. It's an uncommon cause of gastroenteritis but can be caught by: eating contaminated food, such as raw leafy vegetables or undercooked meat – a lways wash all vegetables, including salad leaves, that will be eaten raw, unless they have been pre-prepared and are labelled ‘ready to eat’ (washing may reduce the risk of infection, but will not eliminate any risk of infection completely) lways wash all vegetables, including salad leaves, that will be eaten raw, unless they have been pre-prepared and are labelled ‘ready to eat’ (washing may reduce the risk of infection, but will not eliminate any risk of infection completely) touching infected animals or accidentally coming into contact with their faeces contact with people who have the illness, particularly if you do not wash your hands thoroughly after using the toilet or before handling food

Symptoms include diarrhoea, stomach cramps and occasionally fever. About half of people with the infection will have bloody diarrhoea. People usually notice symptoms 3 to 4 days after they have been infected. But symptoms can start any time between 1 and 14 days afterwards.

A small number of people with E. coli O157 infection go on to develop a serious condition called haemolytic uraemic syndrome (HUS). This can sometimes lead to kidney failure and death, although this is rare. The risk of HUS is highest in children aged under 5 years.

Some people become infected but don't develop symptoms.

What does smashing a cucumber do?

The smashing process, a classic Chinese technique, cracks the skin, helps release the seeds and splits the flesh into appealing craggy pieces. Salting and chilling the cracked cucumbers give them the perfect cool, crunchy, watery mouth feel.

Step 1 Rinse cucumbers and pat dry. Cut crosswise into pieces about 4 inches long. Cut each piece in half lengthwise. Step 2 On a work surface, place a piece of cucumber (or several) cut side down. Lay the blade of a large knife flat on top the cucumber and smash down lightly with your other hand. The skin will begin to crack, the flesh will break down and the seeds will separate. Repeat until the whole piece is smashed. Break or slice diagonally into bite-size pieces, leaving the seeds behind. Step 3 Place the cucumber pieces in a strainer and toss with a big pinch of salt and a big pinch of sugar. Place a plastic bag filled with ice on top of the cucumbers to serve as a weight and place the strainer over a bowl. Let drain 15 to 30 minutes on the counter, or in the refrigerator until ready to serve, up to 4 hours. Step 4 Make the dressing: In a small bowl, combine salt, sugar and rice vinegar. Stir until salt and sugar are dissolved. Stir in sesame oil and soy sauce.
