What does soaking potatoes in baking soda do?

"Baking soda [what Americans call bicarbonate of soda] breaks down the pectin in the potato and draws starch to the surface. What do you get? Wonderful browning and a crispiness you wouldn't otherwise achieve.”

What are you planning on having for lunch? A jacket potato wouldn’t be a bad shout, would it? A crispy on the outside, fluffy on the inside jacket potato smothered in butter and loads of cheese. Or beans maybe? Or both? Or tuna’s always a great shout on a baked potato. Anyway, it’s your lunch – do what you want.

But if you do decide to have a jacket potato for lunch, can we give you a little tip on how to make it the crispiest potato of your whole damn life?

Well, actually it’s a tip from chef Byron Halliburton…

According to Byron, the key to a super-crispy-skinned baked potato is bicarbonate of soda. Yup: the stuff that’s always lurking at the back of your baking cupboard; behind the novelty cookie cutters and the seriously-out-of-date almond essence. Byron told Insider that if you partially boil your jacket potato in a pot of water with half a teaspoon of bicarbonate of soda before popping it into a hot oven, you won’t regret it.

So, what’s the science behind all of this then?

"Baking soda [what Americans call bicarbonate of soda] breaks down the pectin in the potato and draws starch to the surface. What do you get? Wonderful browning and a crispiness you wouldn't otherwise achieve.” So, will you be giving Byron’s tip a try this lunchtime? Because we sure as Hell will be. If you like to stick to old school ways of baking potatoes, here are a couple more traditional ways of baking a potato.

How to bake a potato in the oven

Ingredients:

4 baking potatoes, scrubbed

Extra-virgin olive oil

Sea salt

Freshly ground black pepper

Directions:

Preheat oven to 180°C (160ºC fan). Pierce potatoes all over with a fork. Rub with oil and season generously with salt and pepper. Bake until potatoes are easily pierced with a fork, 1 hour to 1 hour 30 minutes.

Air fryer baked potato

What's even easier than baking a potato in the oven? Baking one in an air fryer!

Ingredients:

1 baking potato

Sunflower oil spray

Sea salt

Directions:

Wash your potato and allow to dry completely. Preheat air fryer to 200°C and set timer for 40 minutes. Place your potato in your air fryer in a single layer and spray them with sunflower oil spray so they are well coated. Sprinkle generously with sea salt, then turn the potato over and repeat. Cook your potato for 40 minutes, turning halfway through. After 40 minutes, poke them with a fork to make sure they’re cooked and lovely and fluffy in the middle. If they’re not, give them another 10 minutes, and continue to do this until they’re fully cooked.

Serve with your favourite baked potato toppings.

How to microwave a baked potato

Short on time? Well, did you know you can microwave a baked potato?

Ingredients:

1 baking potato

Flaky sea salt

Freshly ground black pepper

Butter, for serving

Directions:

Wash potato thoroughly, pat dry, and pierce 3 to 4 times with a fork. Place potato on microwave-safe plate and microwave 7 minutes, turning over halfway through cooking. If your potato isn’t fork tender after 7 minutes, continue microwaving in 1 minute increments. Let rest for 2 minutes. Split potato down the middle, season with salt and pepper, and top with butter before serving.
