There aren’t many comfort foods more satisfying than ice cream.

Sweet, rich and creamy, it’s one of those soothing treats that can help you forget all about the cares of the day. If you’re on a keto diet, you may think ice cream is off limits. Typically, this frozen dessert is made with sweeteners that boost carb count. This can make ice cream an unsuitable choice if you’re following a low-carb eating plan such as the ketogenic diet. Happily, there’s a solution: keto ice cream. This gluten-free dessert looks and tastes like regular ice cream, but it’s made with ingredients that won’t take you out of ketosis.

In this article:

We’ll explain a few keto basics to keep in mind when selecting ice cream. Then we’ll take a look at a few top keto ice cream brands that make low-carb choices you can buy online or in grocery stores. We’ll examine the ingredients these brands use, and we’ll let you know what flavors each brand offers. Finally, we’ll share a keto ice cream recipe or two. Each recipe tastes great and won’t spike your blood sugar. Some can be completed in less than five minutes and don’t require an ice cream maker.

Keto rules

Why is regular ice cream typically a no-go with keto? It has everything to do with the basic rules you need to follow on a ketogenic diet. A keto eating plan is a low-carb diet in which most of your calories come from fat. The macronutrient ratio of a keto diet typically looks something like this:

55 to 60 percent fat

30 to 35 percent protein

5 to 10 percent carbohydrates

This means if you’re consuming 2,000 calories per day, you need to limit daily carb intake to no more than 20 to 50 grams if you want your diet to remain keto-friendly. This macro ratio forces your body to source its energy from fat instead of carbs. Ultimately, this puts your body in a state called ketosis. With a keto diet, ketosis is the goal, and the objective is to remain in that state for as long as possible. Studies have shown that ketosis can support weight loss and help the body burn fat more efficiently.

Net carbs

You’ll notice that the nutrition labels on some keto foods refer to net carbs. Carbs and net carbs are not the same. Let’s take a look at how these two things differ: When used on a nutrition facts label, carb refers to the total amount of carbohydrates that a food possesses. Net carb has a slightly different meaning. This term refers only to carbs that are absorbed by the body. Fiber and sugar alcohols contain carbs (low-carb sweeteners such as powdered erythritol and xylitol are sugar alcohols). Your body doesn’t absorb the carbs present in fiber and sugar alcohols. As a result, carbohydrates from these ingredients aren’t included when calculating net carbs. With whole foods, you can calculate net carbs by subtracting fiber from the total number of carbs. With processed foods, you can find out how many net carbs are present by subtracting fiber and sugar alcohols from total carbs.

What is keto ice cream?

Now that we’ve covered a few keto basics, it’s time to take a closer look at keto ice cream. The best way to gain a deeper understanding of this yummy frozen dessert is to compare it to regular ice cream.

Regular ice cream: Ingredients and carb count

We’ve already talked about a few basic rules of keto. With a keto diet, most of your calories come from fat, and your carb intake shouldn’t exceed 5-10 percent of your total calories. On a 2,000-calorie diet, this means you’re eating just 20 to 50 grams of carbs each day. Let’s start by taking a look at the ingredients contained in a package of regular vanilla ice cream. The specifics will vary from product to product, but by and large, this food is made using these four key ingredients: Milk – This may be low-fat or high-fat, but the creamiest ice cream tends to include the fattiest milk available. From the perspective of remaining in ketosis, high fat content is good. But full-fat dairy milk also contains high amounts of lactose. Lactose is a milk sugar, and it can boost carb count and bring your ketosis to a grinding halt. For this reason, dairy milk isn’t recommended when you’re following a keto diet. – This may be low-fat or high-fat, but the creamiest ice cream tends to include the fattiest milk available. Lactose is a milk sugar, and it can boost carb count and bring your ketosis to a grinding halt. For this reason, dairy milk isn’t recommended when you’re following a keto diet. Heavy cream – Also referred to as heavy whipping cream, this ingredient helps make ice cream a thick, rich dessert. Half and half can be used, but the most decadent choices usually include full-fat cream. Vanilla extract and vanilla bean are both keto-approved. – This addition gives vanilla ice cream its unique flavor. Some products use vanilla extract, while others use vanilla beans. Vanilla extract and vanilla bean are both keto-approved. Sugar – Many vanilla ice creams contain white sugar. Plain white sugar preserves the light color you expect from this flavor of ice cream while adding the sweetness you crave from this frozen dessert. Unfortunately, sugar isn’t keto-friendly. It’s high in carbs; a single tablespoon of sugar contains 13 grams of carbohydrates. It just takes a couple tablespoons of granulated sugar to kick you out of ketosis. Now let’s examine the macro ratio of a typical package of regular ice cream. A typical serving of vanilla ice cream contains:

45 percent carbohydrates

48 percent fat

7 percent protein

What’s more, a single half-cup serving of regular ice cream contains a whopping 16 grams of carbs. That’s almost enough to push you above your daily carbohydrate limit if you’re following a keto plan that’s extremely low-carb. It’s easy to see why regular ice cream doesn’t qualify as a keto-friendly food.

Keto ice cream: Ingredients and carb count

With all that out of the way, it’s now time to take a closer look at keto ice cream. Regular ice cream gets most of its carbs from sugar. Keto ice cream has a much lower carb count. It achieves this by replacing sugar with a low-carb sweetener.

So, what exactly is a low-carb sweetener? Here are some examples:

Xylitol

Erythritol

Stevia

Swerve (a blended sweetener that that includes erythritol and oligosaccharides)

Monk fruit

While regular ice cream can contain over 16 grams of carbs per serving, keto ice cream often has less than half that amount. For example, in our recipe section, we offer a homemade keto ice cream that contains just 7 grams of carbs in a two-serving portion. And you can purchase store-bought keto ice cream with a net carb count of just 4 grams per pint. Keto ice cream is often made with animal products such as egg yolk, heavy cream and butter. However, vegan alternatives are available. Keto-friendly dairy-free ice cream often includes ingredients such as:

Coconut milk

Coconut cream

Almond milk

Avocado

Chocolate chips

Cocoa powder

Store-bought keto ice cream

What’s the best keto ice cream you can purchase online or in a grocery store?

There are a few keto ice cream brands to consider. These brands all ditch the sugar to give you nothing but creamy, low-carb, keto-friendly goodness. Your choices here go way beyond keto vanilla ice cream or keto chocolate ice cream; still, those basic choices are very much on the table if you have a craving. Beyond those two classic favorites, there’s a rich assortment of flavors to check out. Keep in mind that while the brands discussed below all make low-carb ice cream, some of the flavors they offer have a higher carb count than others.

Rebel

Rebel specializes in low-carb ice cream that’s high-fat, gluten-free, low-glycemic and keto-friendly, with no sugar added. The brand has a reputation for making great-tasting keto ice cream that features high-quality ingredients. Its commitment to quality has won the Rebel brand a loyal and passionate following.

Rebel ice cream ingredients

It’s always important to know what’s in your packaged food, but it’s even more critical when you’re following a specialized, somewhat restrictive diet such as keto. You’ll find the following ingredients in Rebel keto ice cream:

Heavy cream

Heavy cream is the high-fat portion of raw cow’s milk. When left to its own devices, fresh raw milk will naturally separate into cream and milk. Because of its high fat content, the cream will rise to the top. To produce heavy cream, this raw cream is pasteurized and homogenized to kill pathogens and extend its shelf life. Heavy cream is rich in vitamins A, D, E and K. The heavy cream used by Rebel doesn’t contain harmful chemicals. It comes from cows that are rBST- and hormone-free.

Egg yolk

Egg yolk is full of nutrition. A 2009 review found that most of an egg’s nutrients are located in the yolk. Egg yolk raises HDL (high-density lipoprotein) cholesterol in the body. This is the “good” cholesterol that supports health. People with higher levels of HDL cholesterol usually have a lower risk of stroke and heart disease.

This sugar alcohol has a name that makes it sound like a chemical. In fact, it’s a natural sweetener that’s produced when fruits and vegetables are allowed to ferment. The body doesn’t digest erythritol, and it’s excreted via urine. It rates a zero on the glycemic index scale and contains almost no calories. Erythritol won’t raise your blood sugar. And unlike some other sugar alcohols, it won’t cause gastrointestinal distress.

Monk fruit

This natural, low-carb sweetener gets the job done with no aftertaste. Also known as lo han guo, monk fruit is a small melon grown in southern China. This fruit was first cultivated by monks many centuries ago, and that’s where it gets its name. Monk fruit provides sweetness without raising your blood sugar. And since it has no calories, carbs or fat, this sweetener can help support weight loss.

Milk protein isolate

There’s lactose in milk, and that can make this food too high-carb for keto. Milk protein isolate is essentially milk that has had all its lactose removed. This process reduces milk’s carb count and makes it keto-friendly.

Chicory root fiber

Chicory root fiber is a prebiotic. Prebiotics are foods that foster the growth of healthy bacteria in the gut. It has a sweet flavor that nicely complements that of erythritol. The flavor combination of these two items plays a big role in giving Rebel ice cream its natural sweetness.

Vegetable glycerin

Rebel includes a small amount to vegetable glycerin to add softness to its keto ice cream. Though vegetable glycerin is quite sweet, it’s not metabolized as sugar by the body. The vegetable glycerin used by Rebel is soy-free – it’s sourced from palm.

Gums

Gums help hold Rebel’s ice cream together, and they give it structure. Rebel uses gums such as Peruvian carob gum, guar gum and xanthan gum. These are commonly used thickeners that are very low-carb. Your body is unable to digest these gums, so they provide no calories or nutrients. Some gums, such as xanthan, have shown to lower cholesterol.

Natural flavors

You’re probably familiar with vanilla extract, an extract sourced from vanilla bean. With vanilla extract, alcohol is used to help create a flavor that’s highly concentrated. The same approach is used when creating the other natural flavors present in Rebel ice cream. These flavors have no sugar and almost no carbs.

Sunflower lecithin

Sunflower lecithin is a natural thickening agent. It also improves the texture of a dish, and it can act as a binder in desserts and bread. This natural emulsifier is derived from sunflower seeds. It’s rich in choline, a lipid substance that improves brain function.

Inclusions

The inclusions used by Rebel ice cream are what distinguish one flavor from the next. The range includes things such as cookie dough, peanut butter, black raspberries, sour cherries, dutched cocoa, roasted almonds, strawberries, roasted pecans and chocolate flakes. These inclusions stick to the keto plan by being low in carbohydrates.

Rebel ice cream flavors and carb count

Now on to the fun part – flavors! The range of flavors offered by Rebel is pretty extensive. It includes everything from a satisfying Butter Pecan ice cream to a Cookie Dough flavor that will take you back to childhood moments spent licking the bowl as your mom made cookies in the kitchen. Let’s take a closer look at flavor selection and carb count. These flavors have just 4 grams of net carbs in an entire pint:

Mint Chip

Butter Pecan

Chocolate

Vanilla

A pint of each of these flavors has just 5 grams of net carbs:

Salted Caramel

Cookie Dough

Triple Chocolate

With these flavors, you get 6 grams of net carbs per pint:

Coffee Chip

Strawberry

Coconut Almond Swirl

Cherry Chip

Rebel’s Black Raspberry and Peanut Butter Fudge flavors have 7 grams of net carbs per pint, while the Cookies & Cream flavor has 8. Expert tip: To make sure your Rebel keto ice cream is at its most scoopable and delicious, allow it to soften at room temperature for about 10 to 15 minutes before you eat it.

Enlightened

Enlightened is a company that offers many different types of frozen desserts. The product range includes low-calorie ice cream with just 70 calories per serving, as well as fruit bars that are relatively low in sugar. For vegans, Enlighted makes dairy-free ice cream choices that are low in sugar and low in calories. But we’re all here to find out what Enlightened has to offer on the keto front, so no more beating around the bush. Enlightened sells keto ice cream and keto ice cream bars. The brand’s keto ice cream gets its thick, luxurious texture from real cream. Zero-carb sweeteners allow this delicious dessert to keep you in ketosis.

Enlightened ice cream ingredients

Enlightened keto ice cream contains the following ingredients:

Cream

Cream helps give Enlightened keto ice cream its rich texture. You may be wondering what benefits cream has to offer, aside from its dessert-friendly taste and texture. Well, cream is a healthy fat. A 2015 study of 26,930 people in the American Journal of Clinical Nutrition showed that those who eat a lot of high-fat dairy products such as cream and butter actually have the lowest incidence of diabetes.

Erythritol

This sugar alcohol provides sweetness without the carbs that come with sugar. This sweetener does more than just keep you in ketosis. It functions as an antioxidant, and it may help improve the health of blood vessels in those with type 2 diabetes. Also, too much sugar will rot your teeth; sugar alcohols such as erythritol won’t harm your pearly whites. In fact, studies have shown that erythritol may help reduce the formation of cavities and improve overall dental health.

Non-GMO soluble corn fiber

This is a somewhat controversial ingredient if you’re familiar with the rules of the keto diet. Corn itself isn’t a great choice if you’re on the keto eating plan, since it has too many carbs. This might lead you to wonder why corn fiber has been included in an ice cream that’s keto-friendly. It turns out soluble corn fiber has undergone processing that makes it very different from corn. With this corn fiber, enzymes have been added that break down its bonds. The effect is similar to what takes place when food is broken down in your digestive tract. The end result is a low-sugar, non-digestible fiber that rates around a 25 on the glycemic index; table sugar has a glycemic score of around 65. The fact that it’s low in sugar and has a low glycemic score allows soluble corn fiber to rank as an acceptable food choice for those on a keto diet. Furthermore, soluble corn fiber has some benefits that are worth noting. It doesn’t spike blood sugar, and it’s a prebiotic that supports the growth of healthy gut bacteria.

Egg yolk

Egg yolk helps the ingredients in Enlighten keto ice cream to blend together evenly and smoothly. Of course, egg yolk is also rich in nutrients that can support your health and well-being. Egg yolk contains protein that can build muscle, burn fat and support healthy weight loss.

Milk protein concentrate

We mentioned that Rebel uses milk protein isolate in its keto ice cream. Enlightened uses milk protein concentrate it its keto products. The differences between milk protein concentrate and milk protein isolate are generally minimal, though there can be variances in the way each is produced from manufacturer to manufacturer. Both products remove the lactose from milk, and what’s left is mostly protein. In many cases, milk protein isolate has a higher protein content and less lactose that milk protein coneentrate, though the absolute differences in this area are minor. Companies sometimes choose the isolate over the concentrate because they want to be able to declare the product lactose-free in its labeling and marketing.

Skim milk

Skim milk isn’t widely held as being a keto-friendly food. However, remember that with ketosis, the only thing that matters is carb count. If skim milk is used in quantities small enough to keep you under your daily carb maximum, it won’t throw you out of ketosis. Based on the carb count of Enlightened keto ice cream, only a very small amount of skim milk is used during the making of the product.

Gums

Gums help thicken the ice cream mixture during the production process and help give this dessert its familiar consistency. Enlightened uses gums such as tara gum, guar gum and carob gum in its keto ice cream. Guar gum is extracted from legumes known as guar beans. It has prebiotic benefits, and it’s high in fiber. Carob gum in also called locust bean gum, and it’s a popular thickener. It’s extracted from the seeds of the carob tree, and it’s a vegan product. Studies show that carob gum may help lower blood sugar by limiting the amount of carbs and sugar the body absorbs from food. Tara gum is extracted from a legume tree that’s native to Peru. It’s vegan and gluten-free, and it’s used as a thickener in dairy products such as cheese, cream, yogurt and ice cream.

Oils

Oils can help give ice cream a denser texture. Enlightened includes oils such as cottonseed oil, sunflower oil and coconut oil in its products. Derived from the seeds of cotton plants, cottonseed oil is high in polyunsaturated fat. This fat has been shown to lower LDL cholesterol; LDL cholesterol is the kind that can clog arteries and cause heart disease. Cottonseed oil also raises HDL cholesterol; this is the good type of cholesterol that supports health and optimal liver function. Now let’s take a look at sunflower oil. This ingredient is rich in vitamin E, a fat-soluble nutrient that can shield your cells from age-related damage. Finally, there’s coconut oil, found in Enlightened keto ice cream flavors such as Red Velvet. Coconut oil contains medium-chain triglycerides (MCTs). MCTs support healthy weight loss by encouraging your body to burn more calories.

Butter helps give Enlightened keto ice cream its creamy consistency. This dairy product is made by churning milk. This process separates milk’s solid fats from the liquid; the liquid is known as buttermilk. There are valuable nutrients in butter. It’s rich in butyrate and conjugated linoleic acid. Butyrate can improve digestive health by reducing intestinal inflammation, and some studies suggest it could help those who struggle with Crohn’s disease. And studies show conjugated linoleic acid may have anticancer properties and may support weight management.

Monk fruit extract

Monk fruit extract is derived from dried fruit. It has zero calories and carbs, and it’s 150-250 times sweeter than table sugar. A 2011 study shows that monk fruit has anti-inflammatory properties that can help prevent cancer and diabetes.

Sugar

Again, this is a controversial ingredient for a keto product. Some flavors of Enlightened keto ice cream – such as Chocolate Peanut Butter – contain small amounts of sugar. But the sugar content isn’t high enough to have a significant effect on net carbs.

Natural flavors

These are extracts that provide highly concentrated flavor, and they help improve taste.

Allulose

Allulose is one of the newer low-carb sweeteners to hit the market. It’s naturally present in foods such as wheat, figs and raisins. It isn’t metabolized by the body; as a result, it provides virtually no calories. Some studies suggest allulose may lower blood sugar. This ingredient in present in the Pumpkin Cheesecake flavor of Enlightened keto ice cream.

Cream cheese

You may be familiar with cream cheese as a spread for bread and crackers, but it’s also sometimes used as a tasty ingredient in ice cream. Enlightened makes its cream cheese using pasteurized milk and cream, as well as cheese culture. This ingredient is present in flavors such as Pumpkin Cheesecake and Red Velvet.

Inclusions

These vary from flavor to flavor and may include things such as peanuts, dutched cocoa, coffee, unsweetened chocolate, cocoa butter, chocolate liquor and pumpkin.

Enlightened ice cream flavors and carb count

Enlightened keto ice cream comes in the following range of flavors:

Caramel Chocolate Double Dough

Butter Pecan

Chocolate Glazed Donut

Chocolate Peanut Butter

Coffee & Cream

Mint Chocolate Chunk

Peanut Butter Fudge

All flavors have just 1 gram of net carbs per serving.

Enlightened keto ice cream bars

Caramel Dark Chocolate Peanut

Dark Chocolate

Marshmallow Peanut Butter

Halo Top

Halo Top is a popular ice cream brand. The company makes regular dairy ice cream , as well as non-dairy ice cream for those on a plant-based diet. Halo Top also makes ice cream bars in various flavors. This brand has added keto ice cream to its range of products. Let’s take a closer look at what this keto-friendly treat has to offer.

Halo Top ice cream ingredients

Halo Top keto ice cream is made with these ingredients:

Ultrafiltered skim milk

Skim milk isn’t typically keto-friendly since it contains lactose, a milk sugar that’s high in carbs. However, ultrafiltered skim milk falls in a completely different category. This milk has been put through a special filtration process that removes lactose. What’s left is a low-carb, keto-friendly product that’s low in sugar and lactose-free.

Cream

Cream’s high fat content can add an appealing lushness to any frozen dessert. Halo Top keto ice cream uses a lot of ultrafiltered skim milk, which is low in fat. Cream helps add more fat to mix, giving this frozen dessert the rich consistency we typically associate with foods designed for a keto diet.

Erythritol

Erythritol is a popular ingredient in keto ice cream; it’s used by all three brands in our round-up. One big advantage it has over other sugar alcohols is that it contains fewer calories. For example, xylitol (another sugar alcohol) contains 2.4 calories per gram. With erythritol, you get just 0.2 calories per gram. And both these sugar alcohols have fewer calories than table sugar, which contains 4 calories per gram.

Eggs

Eggs help to emulsify the ingredients used in Halo Top keto ice cream. And eggs pack a powerful punch when it comes to nutrition. They’re rich sources of vitamin D, selenium, B12, zinc, iron and copper.

Vegetable glycerin

Vegetable glycerin is made by heating vegetable fats that contain lots of triglycerides. It can help prevent ice crystals from forming in frozen foods.

Soluble corn fiber

Unlike corn, soluble corn fiber is keto-friendly and low in carbs. This ingredient has been shown to lower blood sugar.

Chicory root fiber

Chicory root fiber is used to give Halo Top keto ice cream a thicker, denser consistency. This ingredient contains inulin, a prebiotic that supports healthy weight loss.

Gums

Halo Top keto ice cream contains gums such as xanthan, guar, carob bean and cellulose. These gums are used as stabilizers and thickeners.

Natural flavors

Natural flavors are used in foods such as ice cream to improve taste. These flavors are created from extracts derived from sources such as spices, fruits, vegetables, eggs and herbs.

Stevia leaf extract

Stevia is a popular low-carb sweetener. Unlike table sugar, stevia won’t spike your blood sugar. In fact, studies show that stevia can significantly lower insulin and glucose levels.

Inclusions

Certain inclusions separate each Halo Top keto ice cream flavor from the next. Various flavors contain inclusions such as roasted pecans, cocoa, chocolate liquor, bananas, strawberries, blueberries and cheesecake pieces.

Halo Top ice cream flavors and carb count

Halo Top keto ice cream comes in a range of addictive flavors.

There’s a Caramel Butter Pecan flavor that has just 5 grams of net carbs in an entire pint, and a Jelly Donut flavor has just 7 grams of net carbs per pint.

These Halo Top flavors have 8 grams of net carbs per pint:

Banana Cream Pie

Berry Swirl

Peanut Butter Chocolate

White Chocolaty Macadamia

Finally, there’s a Chocolate Cheesecake flavor that has 10 grams of net carbs per pint.
