Why shouldn't you put cucumbers in the fridge?

According to the College of Agricultural and Environmental Sciences - Cucumbers should be stored at room temperature – not in the fridge. Apparently when cucumbers are stored for over 3 days at temperatures below 10 Celsius, they'll get cold injury: wateriness, pitting, and faster decay.

Here's what should and shouldn't be in your fridge!

Monday 8 June 12:03pm

People have been arguing about where to store certain foods for decades. Most recently a controversial graphic was shared in the States on Facebook which left people divided over the food 'rules' of fruit and veg. The post has racked up numerous comments from confused home cooks, many of whom disagreed with the guide. Arguments like this continue to divide us, so we’ve put together a list of the most debated foods to settle the debate for once and for all.

Store your oranges in the fridge!

Why? For many people, citrus fruits are at home in a fruit bowl - but that’s the worst place for them. The Food Standards Agency say they should be stored in the fridge - and preferably in a plastic bag (this will help them retain moisture), rather than in their original flimsy packaging. Fun fact: Citrus fruit has always been stored to allow it to travel long distances. They last longer at a cool temperature and humidity must also be controlled to stop desiccation. Most citrus fruits will be dipped in fungicide to prevent mould or coated in a petroleum-based or natural wax to retain moisture and shine.

Put cucumbers in the cupboard!

Why? According to the College of Agricultural and Environmental Sciences - Cucumbers should be stored at room temperature – not in the fridge. Apparently when cucumbers are stored for over 3 days at temperatures below 10 Celsius, they'll get cold injury: wateriness, pitting, and faster decay. So it is best to store them in a cupboard. Fun fact: Cucumbers are sensitive to ethylene gas, which is put off by some ripening fruits and vegetables. So for longest storage, don’t keep your cukes near melons, tomatoes or bananas.

Put your eggs in the fridge.

Why? The Food Standards Agency recommends storing them in the fridge, as the risk of salmonella is increased by changes in temperature. The British Egg Information Service also recommends that for optimum freshness and food safety, eggs should be kept at a constant temperature below 20°C, in their box, in the fridge. Fun fact: Many people will ask ‘but why are they not refrigerated in supermarkets?’. Well, most modern supermarkets are kept below 20°C so it is not necessary for retailers to refrigerate their eggs.

Put your bread in the cupboard!

Why? The starch molecules in bread recrystallize very quickly at cool temperatures, and causes the bread to go stale much faster when refrigerated. So shop-bought loaves should be kept in an air-tight plastic bag at room temperature rather than in the fridge.

Stick your ketchup in the fridge!

Why? Heinz has settled the argument with a statement saying: “Because of its natural acidity, Heinz Ketchup is shelf-stable. However, its stability after opening can be affected by storage conditions. We recommend that this product, like any processed food, be refrigerated after opening. Refrigeration will maintain the best product quality after opening.”

Nuts should also be in the fridge.

Why? According to Good Housekeeping because nuts contain a high percentage of oil, they can become rancid more quickly in warm weather. You can store them at room temperature for up to a month. But after that, place nuts in the refrigerator for up to six months or even freeze them for up to a year.

You might like it cold, but chocolate should be in the cupboard!

Why? When your chocolate is too chilled it later reacts with warmer air. This causes condensation on the bar which crystallises leaving the white stuff on the surface of the chocolate. It is instead recommended that chocolate is stored somewhere cool and dark preferably between 10 to 20 degrees with 15 degrees being the perfect temperature. Fun Fact: Cadbury's has revealed that the correct way to store chocolate is in the pantry - not in the fridge. Cadbury wrote on Twitter, “Chocolate should always be stored in a slightly cool, dry, dark place such as a cupboard or pantry at temperatures less than 21C (69.8F) to ensure the quality isn’t compromised.”
